Sweet Potato Tacos

So, I have a confession: Sweet potatoes are probably my least favorite food, closely followed by cauliflower. But I’ve always known how good they are for my health, so I kept trying to like them. These tacos are the first way I enjoyed eating sweet potatoes. The combination of chili, onion, and paprika with a hint of sweet raspberry and lime is incredible. This is another meal that can be prepped ahead of time and then assembled and heated when you’re ready to eat.

2 large sweet potatoes, cut into 1-inch cubes

Juice of ½ lime

½ teaspoon smoked paprika

½ teaspoon garlic salt, or to taste

¼ teaspoon chili powder

¼ teaspoon onion powder

6 (8-inch) corn tortillas, warmed, or 6 romaine lettuce leaves (see Note)

1 cup Black Bean Salsa

¼ cup Raspberry-Lime Sauce

½ small avocado, sliced (optional)
